If it worked at least as good as on Windows I’d be interested, but usually that’s not the case for me. E.g. Disco Elysium works just fine on boot camp MBP13 2019, but when I try it on MacOS I barely get consistent 20 fps.

Empyrion: Galactic Survival is not exactly what you wish for, but it’s an alternative to Space Engineers. Not as detailed on the building part though, but a bit more Rust-like (imo).
