Onion + Garlic + Sweet Potato + Carrot + Zucchini + Eggplant + Tofu (+ leftover Parsley just to get rid of it)
1\2 jar Massaman Curry paste, 2 cans Coconut Milk
Brown Rice with dried Mung Beans in it because they have the same cooking time and then you can smuggle beans into more meals! (Don’t forget your beans people!!)

Great idea with the mung beans, I do the same with brown rice and sabut masoor (brown lentils). I bet this would work with whole urad too!
