Went there for work, but got some real Cuban rum while there along with some good mole paste. So I am drinking the real Cuba Libre and making some tofu mole tonight. Feeling pretty good right now. What are y’all up to?

What rum did you get? How’d you bring it back?
It is just Havana Club. I should have looked out for Cuban rum in shops while I was there. I forgot and only started looking for Cuban rum in the airport no duty store, so I likely really overpaid.
I am also drinking Havana Club I buy a couple bottles whenever I have the chance. I got the seleccion de maestros, bout half a bottle left

Don’t really have a recipe. I am adding vegetable stock to the mole paste to rehydrate it and make a sauce and then adding cubes of tofu to the simmering sauce.
How did it turn out?
pretty well. Put it in corn tortillas and it was pretty tasty.

You liked the veggie stock/mole combo? I think of mole as almost being sweet and chocolatey so I was surprised to read that!
I like it quite a bit. It is still a bit sweet, but the mole sweetness will vary based on the style and location. I got the mole in Puebla, which is where the really sweet mole comes from. But I was able to get mole paste that isn’t that sweet.
No worries, I’ve got the same kind of mind set. As long as it tastes good, I’m set. I hope you’re chilling out with your chow and feeling good!
