Great list, exactly what came to mind for me. I loved My Friend Flicka so much. Also Misty of Chincoteague had a whole series.
The saddle club is a book series iirc. I just remember the TV show being popular when I was a kid, but I’ve never been a horse person so I can’t say if the books or show are worth it.
It was kind of like The Babysitters Club. Fun and worth the read if you’re nine, but honestly someone coming into it as an adult probably won’t like those books.
I figured as much, but I thought OP might be looking to recreate the childhood experience.
Actually, this is me sharpening my genre whetstone. I’m writing a book set in a magic school, main character is taking a pegasus-riding class, and its becoming clear that in the climax of the book I’m going to have to describe some very complex aerial horsemanship when I barely understand how a horse thinks.
Maybe they can dogfight some Nazgûl on horses.

Just hoof it down to your nearest library and ask the librarian. They know how to horse around 🐴👍
I don’t have any suggestions for titles, but I am a geek for a certain type of pet. I found a couple of books about them, and basically it was just by typing in [animal] + [fiction book] into Amazon. This was years back, and idk if it’ll help but it’s fun to read some little adventure books.
