New shows them based on the latest post, Old is oldest post. New comments is based on the latest comment. Most comments is as it says. Most other options (Active, Hot, Scaled, Top, Controversial) use up/downvotes, You can see it detailed here.

That isn’t true.
Feeds can be sorted. The instance you are on sets defaults, but you can change them for yourself.
